It’s in the Bacalan district, a stone’s throw from the Garonne, that Aventure set up its still. More than just a production site, this urban aging cellar embodies the project’s entire philosophy: artisanal innovation, technical precision, and creative freedom. Housed in a raw, non-air-conditioned warehouse, the cellar embraces extreme natural conditions. The unregulated thermal amplitude acts as an aging accelerator—a perfect playground for exploring the bold textures rye can offer.
